Chicken Gnocchi Soup

Listen, it's true. This soup is more or less what would happen if chicken & dumplings and chicken pot pie had a delicious soup baby. Recipe below, enjoy!

Chicken Gnocchi Soup


2 cups cooked chicken

2 cups potato gnocchi

3 celery stalks, diced

3 carrots, diced

1/2 cup frozen peas, optional

1 onion, diced

2 garlic gloves, minced

1 tsp thyme

6 cups chicken broth or stock

3 Tablespoons butter

1/4 cup flour



2 chicken bouillon cubes

1/4 cup of white wine, optional

1/4 cup heavy cream

1 bay leaf

1 tsp salt

1/4 tsp pepper


Melt the butter in a large dutch oven or stock pot over medium heat. Add the onions, celery, peas, and carrots and cook until tender, about 5-7 minutes. Add garlic and rotisserie or cooked chicken, and heat another couple of minutes. Add flour, and stir to coat chicken and veggies. Cook for another 2 -3 minutes and then add wine, if using, and let heat for a few minutes more to cook out the alcohol. Add bouillon cubes, chicken broth, thyme, and bay leaf. Simmer, stirring occasionally for about an hour. Add in gnocchi and cream, let heat/cook in the soup for about ten minutes before serving.
